SWEET POTATO , CARROT & TOMATO SAUCE

Make this delicious enriched tomato sauce with hidden veggies and serve it with our organic baby shell pasta which is available from Ocado... Suitable from 7 months
Suitable for freezing .

1 tbsp sunflower oil
100g sweet potato, diced
60g carrot, peeled and diced
50g Apple, peeled and diced.. 1 clove garlic, crushed
300g passata
100 ml water
2 tsp sundried tomato paste
15g Parmesan, finely grated

1 Heat the oil in a saucepan. Add the potato, carrot, onion and apple. Fry for 2 to 3 minutes.
2 Add the garlic and fry for 30 seconds. Add the passata, water and sundried tomato purée . Cover and simmer for 15 minutes until tender.
3 Blend until smooth then add the Parmesan . Stir until melted .

BUTTERNUT SQUASH. RAISINS AND APRICOT MUFFINS

Suitable from 9 months
Suitable for freezing undecorated

175g self raising flour
50g brown sugar
1 tsp baking powder
1/2 tsp mixed spice
1 tsp ground ginger
100g butternut squash, peeled and grated
50g raisins
30g dried apricots, chopped

125ml sunflower oil
100ml maple syrup
2 large eggs

Decoration
Blueberries
Dried apricots

1 Preheat the oven to 180C Fan. Line a 12 home muffin tin with muffin cases.
2 Mix the flour , sugar, baking powder, spices, squash, raisins and apricots together in a bowl.
3 Mix the oil, maple syrup and egg together in a jug.
4 Mix the wet ingredients into the dry ingredients and beat together . Spoon into the cases . Bake for 20 to 25 minutes until golden and well risen. Leave to cool on a wire rack.
5 To Decorate. Make the ears out of halved dried apricots . Make a nose out of one whole apricot and half a blueberry and add blueberry eyes .

100g ripe mango diced
75g ripe banana, sliced
75ml carrot juice

Measure all of the ingredients into a blender . Blend until smooth. Pour into 8 lolly moulds . Put into the freezer for 4 to 6 hours until frozen

MAKES 8 MINI ICE LOLLIES
