Not only do these look cute they are bunnylicious and easy to make using mini tortillas . Everyone will love them for a savoury Easter treat 🐣 🐰 🐣.
8 mini tortilla wraps
Olive oil
2 onions, chopped
1 tsp fresh thyme, chopped
2 eggs
250ml double cream
150ml milk
120g Gruyere cheese, grated

To decorate
Mini carrots
Spring onion

1 Preheat the oven to 180C Fan. Grease 6 size 1 ramekins with oil. Trim the tortilla wraps to 24cm diameter circles. Line the ramekins with the wraps, pushing t them into the bases and up the sides.
2 Heat 1 tbsp of oil in a saucepan. Cook the onions for 10 minutes until soft. Spoon into the ramekins. Sprinkle with the thyme, mix the eggs, cream and milk together in a bowl. Season. Divide the Gruyere between the cases. Pour the mixture on top. Bake for 20 minutes.
3 Cut our the bunny ears from the remaining 2 wraps. Brush the ears with oil and place on a baking sheet. Bake alongside the ramekins for 8 minutes until golden.
4 When the mixture is set, remove from the oven and inset the ears into the quiche. Decorate with carrot for the bunnies’ nose, chives for whiskers and spring onions for eyes.

I love rhubarb and did u know that officially it’s a vegetable so this is a super tasty way towards your 5 a day . This is so easy to make and comfort food at its best .. Suitable for freezing
A knob of butter
750g rhubarb , sliced
150g strawberries , quartered
125g sugar

150g plain flour
50g oats
25g pecans, chopped
100g butter, diced
50g brown sugar

1 Preheat the oven to 180C.
2 Melt the knob of butter in a saucepan.
3 Add the rhubarb and sugar. Heat for 3 to 4 minutes until the sugar has just melted and coated the rhubarb. Add the strawberries and remove from the heat. Spoon into 8 ramekins.
4 To make the crumble , measure the flour and butter into a bowl. Rub together, then add the pecans, oats brown sugar and pinch of salt. Spoon on top of the fruit .
5 Place on a baking sheet and bake for 25 minutes until bubbling and lightly golden .

4 tbsp sunflower or rapeseed oil
240g skinless chicken breasts but into bite sized pieces
100g carrot cut into matchsticks
100g baby corn slices in half lengthways and then cut in half across
100g fine green beans
2 spring onions, finely sliced
Salt and black pepper

For the batter
1 medium egg yolk
1 1/2 tbsp cornflour
1 tbsp milk

For the sweet and sour sauce
1 tbsp soy sauce
2 tbsp tomato ketchup
2 tbsp rice wine vinegar
1/2 tbsp runny honey
1/2 tsp sesame oil

1 Make the batter in a small bowl. Beat together the egg yolk, cornflour and milk to make a thin batter. Heat 2 tablespoons of oil in a wok or frying pan . Dip the chicken into the batter, then fry for 3 to 4 minutes until golden. Remove from the wok and set aside.

2 Meanwhile, mix together all the ingredients for the sauce. Heat the remaining oil in a wok and stir fry the carrot, baby corn and green beans for 2 minutes.
3 Add the sauce , bring up to the boil and cook for 2 minutes. Remove from the heat and stir in the spring onions. Add the chicken to the vegetables and Heat through. Season to taste. Serve with fluffy white rice. Enjoy A xx

Start the day with this super nutritious breakfast which will keep your little one bobbing along with it’s slow release carbs .. Suitable from 6 months

150ml milk
1 heaped tbsp porridge oats
4 dried apricots, chopped
1 ripe pear, peeled and chopped
1/2 ripe banana

1 Put the milk , oats and apricots into a small saucepan.
2 Bring to the boil, then gently simmer for 3 to 4 minutes.
3 Blend with the pear and banana .

Here’s a delicious quick and easy recipe to make this weekend... You need to use Spanish sweet paprika to season the chicken.. 1/2 tsp sweet paprika
1 chicken breast cut into thin strips

1 tomato sliced
4 spring onions, sliced
4 tbsp tinned sweetcorn
50g Cheddar Cheese, grated
4 small tortilla wraps

1 Mix the paprika chicken and a little seasoning together .
2 Heat a Little oil in a pan. Fry the chicken until lightly golden and cooked through. Set aside.
3 Heat a large frying pan. Mix the chicken, tomato , onion , sweetcorn and cheese together . Put half of the mixture on top of the wrap. Put another wrap on top and press down. After a few minutes, carefully flip over and cook on the other side for 2 minutes. Slide onto a board or plate and sliced into 4 wedges.
