The results of my slow cooked 8 hour spicy ginger turmeric citrus bone broth. vs. 1 hour bone broth with the Instapot on high pressure cook. The 1 hour pressure cooked is darker and fuller. Citrus is super evident and it is definitely more spicy! The slow cooked is oddly lighter and paler, more delicate and definitely less spicy. They had the same exact amount of all ingredients. I love the time saving factor of the Instapot so next time I might add less ginger and chilies. Maybe the pressure cooker just draws out every last bit of citrus oil and spice. The pressure cooker obliterates the bones whereas they are still a little intact even after 8 hours on the stovetop.They are both super yummy and just what I need to knock out this last bit of a lingering cough. Will post the recipe on Hungry Ghost this week. Thoughts?
