Tasty and Colorful πŸƒ

Beets and red pepper Hummus.
Recipe:
1. 2 cups beets, roughly chopped (about 2 medium of 3 small beets)
2. 1 1/2 cups chickpeas (made at home is ideal, but canned is OK)
3. 3 tablespoons olive oil
4. 3 tablespoons fresh lemon juice
5. 2 tablespoons fresh dill
6. pine nuts, for garnish
7. olive oil, for garnish
8. Salt and pepper
9. Cumin
10. 1 garlic (if it’s too small, 2)
1. In a food processor or blender, pulse beets until they blend. Add in chickpeas, olive oil, lemon juice, dill, cumin and salt.
2. Pulse mixture to desired consistency. I like my hummus thicker, but if you prefer a creamier hummus, just keep pulsing the mixture. #hummus #vegan #vegetarian #recipes #organic

When I can’t decide my favorite topping for my maca hot cake that looks like a pizza 🧐🍌✨❀️ Recipe:
Ingredients β€’ 2 tbsp coconut flour β€’ 2 tbsp oatmeal flour β€’ 1 tbsp maca powder (I use Indigo Herbs' Original Maca Powder) β€’ 1 tsp coconut sugar β€’ 1/2 tsp baking powder β€’ 1/4 tsp fine salt β€’ 3 egg whites β€’ 3 tbsp almond milk (or choice of milk)
In a mixing bowl, combine the coconut flour, oatmeal flour, maca, cinnamon, coconut sugar, baking powder and salt. Give it all a stir and ensure there are no lumps.
Crack in the egg whites and add in the almond milk. Whisk together to form a smooth, thick batter.
Top with your fav ingredients ❀️

Veggies CHARDurrito 🌯πŸ₯‘πŸ₯’πŸŒΆπŸ₯•Recipe:

First I clean a big chard leaf, then I love to spread spicy hummus inside. You can actually use any hummus spread you like, personally I’m a fan of spicy food.

Then I cut all my favorite veggies (red bell pepper, carrot, cucumber, avocado, romaine hearts and cabbage) in to thin and long mg shapes. Top it off with olive oil, salt, pepper and roll that baby up! #vegan #recipe #veggies #andreabasave

This chia pudding drives me nuts- but in a really good way! ✨ Recipe:
1. Add the chia seeds, coconut unsweetened milk and vanilla seeds into a lidded jar and stir well. Soak overnight or for at least 2 hours in the fridge.
2. Take the chia pudding out of the fridge and stir well to break up any lumps. Pour into a bowl and top with some fruit and almonds or nuts! ( I topped it with some cacao nibs and PB chips) #breakfast #vegan #fitness
