Literally a perfect Sunday morning โœจโœจ This gorgeous breakfast (out on the deck!!) followed by yoga and the farmers market in #stowe. Why is the fresh fruit in VT soooo freaking good? Had some split personality @daveskillerbread toast with peanut butter - half with strawberries and chia seeds, half with elderberry jam and sliced banana ๐Ÿ“๐ŸŒ Paired it with allllll the fruit โžก๏ธ more strawbs and nanners, cherries, grapes and golden berries (aka gooseberries) which I had never had before but I'm now a fan!!

It was just a littleeeee too cold (in my opinion) to have dinner outside tonight, but that doesn't mean we didn't take full advantage of the grill to prep our dinner! A hodge podge of proteins to please any palate - homemade turkey burgers, BBQ wings, and my fave maple mustard salmon which tastes OMG when made on a grill! Paired with charred purple cauliflower and parm-garlic mini Brussels ๐Ÿ’• Happy #mdw loves!!

I was totally feeling my breakfast of farm fresh eggs, @daveskillerbread and cheese this morning ๐Ÿณ๐Ÿž๐Ÿง€ Ya think Maddie wants me to share?? ๐Ÿถ๐Ÿคฃ Get a load of that tongue!! ๐Ÿ‘…

What do you do when you have leftover fresh mozzarella that's still good but getting a bit dry (aka too dry to taste good in a caprese salad)? Make homemade pizza!! We picked up some TJs whole wheat pizza dough on our recent grocery run and topped it with TJs pizza sauce (so good!), spinach, onions, and multiple cheeses because CHEESE ๐Ÿง€๐Ÿง€๐Ÿง€ Normally I'd pair something like this with a salad or other veggie, but it's been a long day (and week) so this alone took up the totality of my remaining energy. And it seriously hit the spot ๐Ÿ•๐Ÿ˜›

Sometimes you work late and throw a few frozen items on a plate and call it dinner (see my story) and THAT'S OK! Not every meal will be picture perfect or 100% healthy/balanced. Tonight for me the name of the game was speed, so I ate whatever I could make the fastest and tried to get my food groups covered. Since my speedy din tonight is less than beautiful, I figured I'd share this pic from my recent trip to D.C. which I forgot to post! Dinner with family and friends = the perfect opportunity to share a million small plates! One thing I LOVE about Indian food is that it's so easy to find vegetarian options ๐Ÿ‘๐Ÿป Everything you see here is totally vegetarian and 100% packed with flavor! #rasikadc knows how to do it right ๐Ÿ’• (Also...truffle naan!!!)

When you start your day with a healthy breakfast, you also start with a smile for your tummy! I haven't always been the biggest breakfast person - I know, I know, but RDs aren't perfect! I just don't have the biggest appetite when I wake up, so it always takes me a little while to get hungry and want food. Since I know it's important to put nourishing food in my tummy early, I always try to have a little something, and I focus on getting in healthy stuff like fresh fruit (or veg!), whole grains and high quality protein. I know my meal may not always be a big, full, totally balanced breakfast, but by making as many good choices as I can, I get myself on the right track early. On an unrelated note, I like to play with my food and I hope you enjoy my artwork ๐Ÿ˜๐Ÿ˜

Olive oil cake with pistachio mousse, chopped mint and strawberries ๐Ÿ“๐Ÿ“ Sometimes after a long day you just need to treat yourself AND THAT'S OK! I don't eat cake on a daily basis, so enjoying myself with a treat when my tummy says "I want that!" is no skin off my back. I absolutely adored this dessert, and isn't that was conscious indulgence should be about? Enjoyment and fulfillment ๐Ÿ’•

Scottsdale is an incredibly special place for me because it's where @jeremyblechman and I got engaged ๐Ÿ’• We hiked to the top of Camelback mountain at sunrise, spent the day eating delicious food, relaxing and getting pampered, and he proposed in private right before we headed out to dinner at @fnbrestaurant that evening. We were so excited and emotional that night, neither one of us remembers much about the food we ate (shocking considering food is an integral part of most of my memories!), so I'm VERY lucky I got to go back with my good friend and local foodie @azfoodiedietitian last night ๐Ÿ˜ She shares my love for exciting and adventurous food, so we were thrilled to taste a bunch of little plates!! The menu at FnB changes constantly and features local, fresh and unique ingredients! Clockwise we've got:
โœจYellow tomato and peach salad with crispy polenta croutons and pulled mozzarella
โœจFarcous (call it a veggie pancake) with labne and spring greens
โœจSavory soft scrambled duck eggs with morel mushrooms, spring onions and the most amazing (cultured) buttery toast ever

@oikos teamed with @kelloggsus to bring some out of the box breakfast bowls to life at @cpsda 2017! Would you think to pair cereal with yogurt instead of milk? And would you EVER think of this combo with avocado and cayenne pepper? ๐Ÿ”ฅ๐Ÿฅ‘ I'm so into these delicious and unique flavor mixes๐Ÿ‘Œ๐Ÿปand SO excited for our breakfast day two today featuring even more fun toppings and combos ๐Ÿ™Œ๐Ÿป๐ŸŽ‰

The proof is in the pudding...or in this case, the yogurt! Yesterday I told you that I grew up on @dannon cherry flavored yogurt and then I dug up this gem ๐Ÿ’Ž For a static photo, it does a pretty remarkable job of capturing the gusto with which I was consuming this yogurt. Would ya get a load of that old school packaging and nutrition facts label??๐Ÿ‘†๐Ÿป

FULL DISCLOSURE: I took this photo before we cracked open our lobsters tails. Once we did, I was met with some funny colored lobster flesh that totally skeeved me out, so I ended up tossing it and we ate @gardein veggie chik'n patties instead ๐Ÿ˜ฎ It's funny bc it all looks SO pretty (imho) but the lobster was definitely not edible ๐Ÿค” Just goes to show that it's not always how beautiful your food looks that counts! What does count? Making healthy choices when possible, putting in an effort to balance your meals, and being resourceful in a pinch (to name a few) โ˜บ๏ธ Proud to be committed to my healthy lifestyle ๐Ÿ’•๐Ÿ’•
