The temperature’s dropped below freezing so we’ve been making Aluna Coconut snowballs to keep us warm! 🥥🥥🥥🥥🥥 3 cups unsweetened desiccated coconut
1 cup almond flour
1 cup of Aluna coconut rum
1 cup of coconut oil
2 tablespoons of coconut water
3 tablespoons of sweetened condensed coconut milk
Reserve 1/2 cup of desiccated coconut and put aside.
Soak the remaining 2 1/2 cups of coconut in a mixture of Aluna coconut rum and coconut water. Mix thoroughly and leave standing for 2-3 hours or overnight.
Next day, gently heat and melt the coconut oil.
In a food processor or a blender thoroughly blitz the soaked coconut together with the almond flour, melted
coconut oil and condensed coconut milk.
Transfer into a plastic container with a lid and refrigerate.
When the mixture solidifies (2-3 hours or overnight), roll into small balls then roll again in the reserved desiccated coconut.
Place the truffles into an airtight container lined with parchment and refrigerate.
Enjoy with a good hot chocolate, cosy socks and a log fire!
