Just had to pop in and share this delicious plate of food from the other night. Hit. The. Spot.๐Ÿ™Œ๐Ÿป I guess I'm all about the carbs and burgers lately! On the plate is rice with butter, sea salt, and Parmesan, zucchini with butter and sea salt, spaghetti squash with peanut butter and sea salt (are you noticing the butter and sea salt theme here?๐Ÿ˜›), and a trader joes green chile chicken burger. I used to be deathly afraid of salt, but honestly it makes everything taste better, especially when it's sea salt. Besides salt is necessary for our bodies! I used to have such an all or nothing mentality when it came to food. And of course it was always all the good and none of the bad. But the truth is, most things that I was led to believe are bad really aren't bad at all. Almost everything has a place in our diet. Phew, what an incredibly busy week it has been. Long 12 hour days that have been packed with research and preparing for my first formal research presentation to my lab on Monday. I am stressed and exhausted and yet at the same time pretty content. I am learning to find happiness and fulfillment even in the everyday hustle and bustle of life. I am learning and growing each and every day. I am finding enjoyment in simply being here in this world. I am certainly working towards reducing some stress and anxiety that I've been battling lately, but it still isn't consuming me like it once was. I don't feel like I'm just "getting through my days." I feel like I'm actually living them and overall enjoying them. Not nearly as pretty as my meals in Hawaii but still pretty delicious.๐Ÿ’ Quinoa with butter and Parmesan, chicken burger with @truefoodsinc ketchup, and zucchini/yellow squash with butter and sea salt. Also a reminder that your plate doesn't have to be half veggies. Yes I love my veggies and yes I think it is very important to include them in your diet. But they can also be quite filling so if you have to eat a lot of calories (like I do), it can make it easier it if you don't eat too many of them, at least not at once or until you make sure you eat everything else you need to. When I was deep in the depths of my ED, I would fill my plates with veggies so that I could fill myself up without eating too many calories. I still love my veggies, but I also love other foods, hence why half the food on this plate is quinoa.๐Ÿ˜‹ Might be deceiving from the picture but it was quite a tall pile!! The point is, don't get stuck in doing things that you've heard you "should." Yes veggies are healthy and we're always told go get X number of servings per day, but filling up on them may not be what is healthiest for your body at this time. The perfect pairing.๐Ÿ™Œ๐Ÿป I was so thankful to have these in my desk drawer in lab so that I could throw together a quick breakfast when I came into work Tuesday after my trip and had no food in my house! My body is still adjusting to the time change, which means I slept in everyday this week. Well, sleeping in for me is like 6:30/7.๐Ÿ™ˆ I have to be out the door by 7 to catch my bus, which means there have been many rushed mornings and even had to walk to campus one day. Now I could have chosen to set my alarm and force myself back into my old routine, but honestly, sleep feels pretty good and I figure that my body must need it or it would be waking up sooner. I'm sure I'll gradually start waking up sooner, but honestly I don't plan on setting my alarm again. Does it mean my routine might shift? Does it mean I may not be able to workout on days I usually would? Probably. But part of life and mental health is learning to go with the flow and listening to you body. And finally, dessert! Cannolis filled with ube whipped cream and decorated with toasted coconut and caramel sauce. And for my brother, the paradise pie, which consisted of an Oreo cookie crust, kona coffee ice cream, whipped cream, toasted mac nuts, and hot fudge sauce.
