Found this chickpea stew online @nytcooking by @alisoneroman and it was truly magical. I didn’t have canned chickpeas so I soaked some overnight instead, cooked them the following day and then proceeded following the recipe. Wow, it is luscious, velvety, creamy and dreamy. I’m not vegan, hell, I’m not even vegetarian but I’ll make this again. Spiced chickpea stew with turmeric, coconut milk, leafy greens and fresh mint. Drizzled with EVOO, served with some yoghurt and lavash or pita bread. •

Root vegetable gratin. Perfect on a cold, gloomy autumn evening. It warms the heart, the soul and keeps the belly full. Simple to make (if you have a mandolin - otherwise it’s the perfect opportunity to practice one’s slicing skill), only 3 vegetables were used in this version with cream, herbs and some cheese.

Latkes, lapcsánka, bramborák, rösti, zemiakové placky, tocini, draniki, kartoffelpuffer. Whatever you wanna call them, there’s nothing like a good potato pancake. Simple, easy, very few ingredients needed, contributes to zero waste (compost the peel, save the garlic skin and egg shells for stock) and they’re delicious. You can mix in sweet potatoes if you don’t like potatoes by themselves or zucchini or cauliflower etc. I like mine simple, the old fashioned way.

The other day I was craving pasta, all day. Couldn’t stop thinking of how flour and egg can be so majestic, in a creamy lemon garlic and wine sauce with sauteed brussels sprouts and smoked pork loin finished with shaved Parmigiano Reggiano. This picture doesn’t do it justice, but the cravings were satisfied.

Not a big fan of chicken breast. Especially when it’s boneless, skinless. It’s deprived of flavor, fat and joy but for whatever reason it’s popular af in grocery stores, restaurants and all throughout the U.S. I’m almost embarasssed to even post this, especially since even the dish isn’t authentic either but for some reason garlic and ginger just makes everything better. This dish was developed in Taiwan and popularized in America but it’s called Mongolian chicken. Go figure. Supposedly it’s named after the way the dish is made. Prepared and cooked on a big open surface like teppanyaki, was developed first in Taipei, Taiwan. This method reminded them of Mongolian traditions and eventually it all got lost in translation. This dish is simple and super quick and easy to make. All you need is a wok, chicken, ginger, garlic, cornstarch scallions and a few other things and voila, dinner is served in 15 mins. #seanaeats #fritzydrools #icantbelieveijustwroteaboutchickenbreast #mongolianchicken

Thank you to @nytcooking and @primal_gourmet for the inspiration for these ridiculously incredible, tender and beyond flavorful dishes. Whole roasted spiced cauliflower (later served with harissa and tahini yoghurt sauce) and chicken thighs with shallots braised in a harissa cinnamon broth. If you don’t have homemade harissa, you can substitute it with one of @mina ‘s varieties. The results are guaranteed to be outrageous. One of the quickest and most delicious meals I’ve had in a long while.
