If it’s in a ball, pattie or a on a stick, my kids will usually eat it. So I find myself making foods that fall into those categories often, probably more often that I would like. But if my kids eat their dinner, I’ll make all the balls and patties and put veggies on sticks. What’s for dinner: Greek-ish turkey patties, tomatoes, olives, pickled onions, butter lettuce and tzatziki (lactose free @yqbyyoplait, grated cucumber, dill, lemon, garlic, salt and pepper) .

This was so good. I mean, how could it be bad? Pasta (gluten-free), bacon, onions, tomatoes and cheese cannot be bad. And everyone ate it. No complaints. None. I showed you how I threw it together in my stories. I’m so happy there is leftovers. .

Holiday Dinner/Party season is upon us. Do you need a fast and delicious side dish that reheats well? I got ya. My shredded Brussels sprouts with bacon and lemon is delicious. Ginger-garlic meatballs never disappoint! Because they are easy, quick and everyone eats them without a fuss. That’s huge. Huge. Make them ➡️➡️ In a large bowl, add 1 lb of ground pork, 1 egg, 2 tbsp of crushed gf crackers (I like @simplemills), 2 tbsp chopped cilantro, 1 sliced green onion, 1 tbsp @bigtreefarmsbali coconut aminos, 1 tsp sesame oil, 1 tsp salt, 3 minced garlic cloves, 1 tsp grated ginger. Mix well and form into balls. I got 18. Bake them in a 375 degree oven for 24 minutes. I served mine with stir fried veggies (bagged coleslaw and snow peas from @heb) and some rice. .

Do you have a tried and true pasta sauce recipe? Well, if you don’t, I have one AND it could not be easier. I chopped up one onion, two carrots two celery stalks and minced 3 garlic cloves. I added all that to 2 tbsp of melted @tinstarfoods ghee in a dutch oven over medium heat. After the veggies start to soften, I sprinkled in 1 tsp of @primalpalate Super Gyro and salt and pepper to taste. Next, throw in 1 lb of grass-fed ground beef. When browned, I poured in one can (28 oz) of @muirglen crushed tomatoes. Let that simmer as long as you have (30 minutes to an hour). I threw in some chopped parsley at the end. This is great over pasta, spaghetti squash, zoodles... whatever. .

This was harder than I thought BUT both my friend @nuancednutrition and @cleaneatingwithkatie challenged me to do the #notsohumblebragchallenge. This was hard to write and I’m not completely sure why. So, my proudest accomplishments: 🥁🥁🥁 🙌🏻 My two kids are my biggest accomplishment. They are funny, inquisitive and caring little people. Raising kids is tough work.

🙌🏻 I went back to school at 40 (@nutritionschool) and got my health coaching certification.

🙌🏻I taught myself to cook at 31. And now I write my own recipes. I love sharing easy, healthy recipes that your family will eat.

🙌🏻I have been married for almost 19 years. Marriage is hard work but we are a team. We always have each other’s back.

Are you ever so sure you have all the ingredients for something and come to find you are missing three of the ingredients? But it was pouring down rain so I decided to make do with no chili paste, no green veggies and no lime. So I sautéed onion and bell pepper with jarred green curry paste. I poured in coconut milk, bone broth and fish sauce and let that come to a simmer. Then I added some rice noodles and shredded chicken. Ta-dah! Dinner! .
