Seared strip loin - corriander yogurt - smoked carrots - marinated tomatoes - chimi-churri potatoes
Had alot of fun with this one .... fresh spaghetti and sea urchin, with sauce americane, fresh ramps, and basil finish, flavor was crazy !
Razor clams with saffron btoth, tomstoes, chorizo, fennel, nettle pistu, toast point, sherry zabion, micro basil
Seared smoked halibut, crisp pork belly, pea puree, fiddle head ferns, charred corn, preserved lemon curd
I only taste test my wine in 1 cup deli containers .....#cheflife
When ur work decides to do something different. ... we bring in whole sea urchin a day after its caught !! We cut them cleaned then and filled it with a passion fruit custard ....was very cool working with these guys
