BEET CHILI 🌶 came out beeeeautiful. I’ll share the recipe in a bit. Time to eat this bowl of ruby magic. #recipeoftheday🍴
1 cup diced onion
3 garlic clove minced
3 celery (2 cup)
1 large parsnip dice
2 carrots 🥕 dice
1 jumbo beet (2 cups diced)
1 can (14-oz) diced tomatoes
1-2 tsp oregano
2 tsp cumin
1 1/2 tsp chili powder
1/2 tsp smoked paprika
1 cup no-beef broth (on blog) 1-2 tbsp vegan Worcestershire 2 bay leaves
1 tbsp yellow or Dijon mustard

1/2 tsp coriander (or cocoa)
1/2 tsp mild curry powder (omit if using cocoa) 😋
DIRECTIONS: sauté onions and garlic. Stir in spices to coat. Add remaining EXCEPT coriander. Pressure cook 1-2, slow cook for hours or cook on stove (covered) until all veggies are tender. Stir in coriander plus ramp up other spices if you like. Add salt and pepper and more Worcestershire to taste. If it’s acidic, add a quiet of ketchup. Unsweetened cocoa powder could also be good alternative option (without coriander and curry). I also added about 1/2 cup cola someone abandoned in the kitchen which was a nice touch! Can omit of course! Very different and doesn’t taste like beets.

How GORGEOUS are these grapes? The farmers market... I’m legitimately like a kid in a candy 🍭 shop swooning over all the colorful produce! My my how my mind and times have changed. I used to lick bakery windows but now I prefer my sugar al natural 🤭 🌱 hang in there lovelies!!! It gets better and takes time but I swear the “sweet tooth” recalibrates.. eventually. I’m not saying I NEVER drool over doughnuts or cupcakes (and I’ll imbibe once in a blue moon 😛 and feel hungover after 😵 ...) BUUUT I used to eat sugary pastries for breakfast, in the afternoon and for dessert after dinner (AND crave them 24/7!) Thankfully 😅 not so much anymore. NO big secret amount of kale — but I do find the better I eat, the better I eat! 🌈 Aaaand the longer I honor myself with real food (real fuel) I magically feel turned off by the other stuff. 🙏🙌 I never ever believed people when I heard them say it, but it’s true—your tastes, preferences, and cravings change!!! and IF you still want the sweet things 🍫🍰🎂🍩🍬 that’s normal and nothing to be ashamed about but maaaybe a nap, a hug, or some other sweetness will do. 😘

Introvert and proud 🤓 seriously though... I spent YEARS trying to be an extrovert. Doing all the crazy social butterfly 🦋 things that left me exhausted and drained. JOMO is my jam now. (Joy of Missing Out). I’ve found a lot of peace and “soul food” connecting very closely (by text) to two female friends, posting here and streaming live with you lovelies, reading a toooon of books 📚 (alone) and generally embracing my super awkwardness and homebody tendencies. 🏡 It is absolutely fine if you’re more comfortable alone or online. 🤗 you’re peeps are there, and I’m one of them. SHOULD YOU “GIVE IN” TO KEEP THE PEACE? In my experience this doesn’t work. With the holidays 🎃🦃🎄 coming, a lot of people ask me if they should forgo their diet/being vegan/preferences (etc) to make grandma or someone else happy 😁 or so as not to be a burden. 1️⃣ you are not a burden, your needs and wants are valid. ✅ 2️⃣ in my experience, “giving in” only means they will respect you or your opinion LESS 👎 *and* every next time they’ll be relentless, pushing to find your new breaking point, 🤜 which only further tells them you can be pushed and you’re not actually serious or committed to being vegan/losing weight/whatever. 3️⃣ you’re going to have to stand your ground sometime, the sooner you do it, the less painful it’ll be. 🔥 Boundaries are healthy and necessary in all relationships. (Including boundaries with yourself). They create respect and self-worth. 4️⃣ I’ve never met someone who “caved” for someone else and said “I’m glad I did that” instead they beat themselves up and felt bad for days and weeks, 😔 which happens when we go against our true selves and desires/goals/beliefs. Is that person more important than your inner peace? ✌️ Most likely they would not do the same for you — and actually, by asking or expecting you to compromise yourself for their wants or their comfort, they are telling you very clearly that they would not suspend their own pleasure or peace for you, so why should you make the sacrifice for them if it’s not reciprocated? 5️⃣ compromise is good but it isn’t synonymous with “sacrifice” and you should both be bending together... I make concessions and compromises sometimes but I limit it to what I’m okay with—knowing sometimes I’ll have to say No. 🧚🏻‍♀️ASK: “will doing this for this person make ME happy?” 👈 NO is a complete sentence 🙅🏻‍♀️ and it makes room for future YESES that work and honor you 🌸 I hope this post inspires you to stay true to you. 🐠You never need to justify, argue, defend or explain yourself. Not even to yourself. You do YOU. 💋 🌵

Fall nights mean stews 😋 this is @mealmentor African Sweet Potato Stew with leftover kale. A fave in our house because it uses a touch of peanutbutter. Took 10 minutes - next time I’ll try it in the pressure cooker for 1 minute. So often I focus on the people who don’t call me back, or the negative reviews and comments on my books or recipes, or the parties I don’t get invited to (“is everyone hanging out without me?”) the lack of likes on a post, or the pug thats not at my feet... INSTEAD of relishing the people who do call, the kind reviews, the people who support and care about me, petting the dog already at my feet... GO TO THE LOVE. That’s what I want to work on this week. 💕 Showing up for the people who show up. Going to the love provided instead of looking at where it’s not and being sad. One meaningful encounter feeds the soul. Pull in the people who are already there for you. Rejection sucks but the anecdote is to Go to the love 💗 😘 I love you ❤️ thanks for showing up for me. 🤗 Hope you are feeling my love and appreciation for you today xo 💋 #love #lovewins #gotothelove

I switched a color 🙌 it feels weird and unreal. Learning to knit was my goal/resolution for 2018. 💫 I taught myself watching YouTube. I am so proud of myself for not quitting, even when it felt impossible and seemed too hard. I stop knitting look down and think “OMG I MADE THAT!” Every stitch in this blanket is a meditation, a manifestation of love from me to my sisters baby. 💕 👶 I would never have had this opportunity had I quit. Whatever you’re determined to do, don’t lose that determination. 💪 You can, you will, and it’ll be more magical and more worth it than you can currently imagine. 🌈 Learning to knit is something I’m SUPER proud of. I’m really really proud I did this, especially after years of saying “I want to” and “someday” I did it! I FREAKING DID IT! 🌟 I’m actually more proud of this than writing any of my books, ✍️ or even running a marathon. 🏃🏻‍♀️ Other people may see those as my greatest achievement but accomplishing what challenges YOU, now that is amazing. Being able to knit like this is a huge victory lap over my perfection, issues with workaholism, and OCD. It may be easy for others but it wasn’t for me. We all have our individual mountains. ⛰ Climb yours. I hope this post inspires you to step up ☝️ thanks for reading 🙏 and remember what’s easy for you is hard for someone else, give them a helping hand 🤝 when you can because one day you’ll need to watch tutorial videos on YouTube 😹 💋
