  •   tres_chic_pea Vegan "Tuna" Bake of Love

    Preheat oven to 180°, lightly oil a large casserole dish.
    500g pasta (macaroni/spirals/tortellini) cooked, drained & drizzled with olive oil to prevent sticking
    800g cooked, rinsed chickpeas (2 cans), roughly mashed 1-2 brown onions, finely diced
    3-5 cloves garlic, crushed
    1C button mushrooms, finely sliced
    1C frozen peas
    3/4C panko breadcrumbs

    Sautee onion in a little olive oil until clear, add garlic and mushrooms and sautee, stirring for a further 4-5 minutes.
    Now combine all ingredients - except breadcrumbs - in a large bowl (or the pot you cooked the pasta in to save on dishes) and prepare the sauce. 20h
  •   tres_chic_pea Sauce:
    1C cashews
    1/2C almonds
    1C vegetable stock
    1C oat (or other non-dairy) milk
    Juice of 1 lemon
    2-3 Tbsp miso paste
    1tsp paprika

    In a high power blender, combine all ingredients until silky smooth.
    Pour over pasta mixture and stir well to coat. Taste for seasoning.
    Pour into your prepared dish & press down. Coat evenly with breadcrumbs and sprinkle with paprika. Bake for 15-20 mins.
    Serve with a fresh salad. 20h

vegancollegestudent Made this great dinner. Trader Joe's vegetable fried rice (frozen and put in the microwave) and mandarin orange chicken-less strips. In all, this is about $5 and took me less than 10 minutes to make. Super college friendly. 1d
