For crispy cracklin'skin...it's easier if you score the skin while it's cold out of the fridge with a super sharp knife.
Going in at 290F for about 4-5 hours. Out to rest for 20 min. Then back in at 480F until crispy skin.

livewellfitness These veggies save me so much time during the week. Choose veggies that cook about the same. Carrots, cauliflower, sweet pots, winter squash ( I used butternut), broccoli. I added in asparagus the last 20-15 minutes because it cooks faster.
Chop veggies
Put in giant bowl
Add olive oil, salt and pepper, chopped garlic and I added Trader Joes everyday seasoning. Mix to coat evenly.
Roast on 400* for about 25-30 minutes.
I know I have posted this many times before but it works. I like when life is simple. Make enough for a few days, put veggies in easy to grab for lunch containers.
I am about to heat some up now for lunch!
