I gotta say, I'm curious who's tried Salsify root? These grow wild at the American River, and if you're not familiar, its seed head is several times larger than a dandelion's though they're in the same family.
You can eat the root. Folks used to farm it and it's also known as 'oyster plant' due to the root's taste.
