  •   chef_garrett @carnivorous_rabbit55 sure, I removed the pin bones just a quick v cut, then seated it hard in the pan, the skin came off because I rushed it but usually it's nice and golden brown. Then I made some green lentils al dente. using; thyme, garlic cloves, and shrimp stock. In a large skillet I sautéed the chorizo, shallots, and garlic, then added the clams a bit of shrimp stock and then, the lentils back to more liquid to finish cooking kinda like a paella. Then served the sablefish over the top. 3h
