fitwithtaste Happy Tuesday! PiYo workout in at 5am this morning and then I have to admit I crawled back in to bed for a little bit. Oops. But then I was inspired to make this bad boy.
A Greek Omelet - the flavor profile was crazy good.

INGREDIENTS •1 egg
•1/3C egg whites
•1/8C chopped tomatoes
•2T chopped cucumbers
•½ arugala
•1/8C chopped red onion
•3T crumbled feta cheese

DIRECTIONS

1.Heat a large skillet over med-high heat sprayed with non stick spray
2.In a bowl mix egg and egg whites until combined
3.Add egg mixture to skillet
4.Cook about 3 minutes until firm (it should be a very thin crepe)
5.Top ½ of the egg “crepe” with remaining ingredients
6.Fold over other side of egg
7.Serve
