sunonthesea Asian Veg Bowl

I love Asian infused cuisine & flavours! They aren't always easy to work with but I'm experimenting and getting better and better! This bowl turned out really well ️ (vegan and gluten free!) Buckwheat soba noodles
Approx 10 shiitake mushrooms
1 small/medium zucchini
2-3 large stems of kale (leaves removed)
1/2 an avocado
Get so a noodles going re directions on box. Put chopped zucchini and mushrooms in a skillet (or wok) with a bit of olive oil. Let cook for about 3 mins stirring frequently. Add about a tsp (each) of soy sauce, toasted sesame oil and rice vinegar and a sprinkle of cayenne. Let flavours simmer. Then add kale leaves and let them absorb the flavours and soften. Add soba noodles when they're done and stir. Add a bit more soy and rice vinegar. Top with avocado and sesame seeds!! This is a delicious way to have tons of vegetables and still have lots of flavour!!
