  • whatjesswore @ebtgust I used: 1.5 cups short grain rice (Nikishi brand), a quarter of a white onion, 5 cloves of garlic, 4 scallions, 6 strips of bacon, 4 eggs, 1 cup frozen mixed veggies, white pepper, salt, low sodium soy sauce to taste.   1w

  • whatjesswore @ebtgust Steps: I cooked the bacon first and drained the fat. Then I cooked the eggs next in the same pan making one large pie so I could cut it into larger pieces. I added enough extra virgin olive oil to coat the pan and stirred in the garlic, scallions and onions until they gave off an aromatic color and the onions turned clear/translucent. Next I had actually cooked fresh rice instead of using old rice. I added it to the pan and mixed it well with the rest seasonings for a few minutes on medium high heat. If it looked dry I added in a bit more oil. I then added in the bacon which I had cut into smaller pieces along with the cooked mixed veggies. I like to add soy sauce (it's enough when the rice has a very light-light brown color), white pepper and kosher salt to taste before I add in the eggs. Lastly, I turned everything together thoroughly. I like to cook the fried rice until the portion on the bottom gets a little crispy.   1w
