One of our WWOOFers introduced us to these scones this past summer and they're a farm favourite!
2 cups flour
1/3 cup sugar
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
8 tbsp butter (cold)
1/2 cup raisins
1/2 cup sour cream
1 large egg
1 tsp sugar for sprinkling
In a large bowl mix flour, sugar, baking powder, baking soda and salt.
With a cheese grater, grate cold butter into the dry mixture and gently stir to disperse the butter crumbs without clumping. Stir in the raisins.
In a separate bowl whisk sour cream and egg and then add to the batter mix.
The dough will be crumbly and difficult to manage. That is good! Carefully flatten the dough mixture onto a sheet of parchment paper (or a floured surface) and press the batter into a circle about 3/4 inch thick.
Sprinkle the dough with 1 tsp sugar and cut into 10 triangles. Place triangle scones on a baking tray with parchment paper and bake in the middle of the oven for 15 minutes. Watch that the bottom of the scones don't burn!
