You can also make cookies out of them!
Preheat your oven to 350°F (175°C). Follow the #muffin recipe as usual, omitting the water. Cover your dough with plastic wrap and chill it in the freezer for about 30 minutes.

To make four dozen uniform-sized cookies, use a #40 portion scoop or an oiled 1 tbsp measuring scoop. Flatten each cookie with an oiled spoon to about half an inch thick. Bake for 12-15 minutes or until browned at the edges. Let them cool on the baking sheet for five minutes.
Transfer them to a wire rack to cool completely. Store in Ziploc snack bags or an air-tight container.

These cookies are great as a snack or as a #granola, crumbled over @Chobani Non-Fat Plain Greek Yogurt. Enjoy!

*My changes from the orignal recipe

DRY
*1 1/2 cups Bob's Red Mill Gluten-Free Steel-Cut Oats
*1 1/2 cups Gluten-Free Oat Flour*
1 1/2 tsp baking powder
3/4 tsp baking soda
*1/2 tsp Kosher Salt
1/4 tsp cream of tartar
*2 dashes cinnamon
*4 tbsp Wholesome Sweeteners Fair Trade Raw Cane Sugar
*8 Algerian Deglet Noor pitted dates, coarsely chopped
*1/2 cup walnuts, coarsely chopped

WET
*1 egg
*1 egg white
*1 medium ripe banana
*1/4 cup Whole Foods 365 Organic Coconut Oil
*1 tbsp Wholesome Sweetners Organic Blackstrap Molasses
*2 large organic granny smith apples, peeled and grated in processor
*1/2 cup filtered water

COOKWARE
12 Ball 4oz. Quilted Crystal Jelly Jars
Baking Sheet

Preheat oven to 400F.

Mix all the DRY ingredients together in a large bowl. Make sure to distribute the dates well throughout the dry ingredients to prevent them from sticking together.

Mix all WET ingredients, except apples and water. Once throughly mixed, fold in apples and mix with DRY ingredients until moist. Then add water until you get a thick oatmeal-like consistency.

Grease the 12 Ball 4oz. Quilted Crystal Jelly Jars with a bit of Coconut Oil. Then fill each one with batter up to the bottom line of where the cap would close. Bake 6 jars at a time on a baking sheet about 30 minutes or until a toothpick inserted in the center of a muffin comes out clean. Cool the muffins completely on a wire rack.

Notes:

The nice thing about baking these muffins in glass jars is that you can take them with you anywhere! If the muffin bakes higher than the top of the jar, just slice it down after it has completely cooled and screw the top on. Individual, portable clean snacks? Yes please!

  •   scarletrx These muffins are great for pre- or post-workout snacks. They're great heated up in the microwave for about 15-20 seconds. You get almost 6 grams of Protein and 8.6 grams of Sugar per muffin. So don't go crazy with these. Even though they used natural sweeteners, they're still treats. Also, I used 12 dates, instead of 8.

    I'll make these again on Wednesday, with 8 dates and 4 tbsp of raw cane sugar. Enjoy!

13 1/2 cups water
1 cup (about 1 ounce) dried hibiscus
1 cup fresh ginger juice (from 2 packed cups freshly grated ginger--see below)
1/4 cup freshly squeezed lemon juice (about 3-4 lemons)
1 cup agave nectar or simple syrup*

1. In a large saucepan over high heat, combine 7 cups water with the hibiscus. Bring to a boil. Reduce the heat and simmer, stirring occasionally, for 20 minutes. Remove from heat.

2. Meanwhile in a 1 gallon pitcher combine the ginger juice, lemon juice, agave nectar, and the remaining water and stir well. Refrigerate.

3. Allow the hibiscus drink to cool for 2 hours and then strain into the pitcher with the ginger drink mixture. Mix well and refrigerate until cool.

4. Serve over ice.

Ginger Juice: To get ginger juice from ginger knobs, grate them on a coarse grater (no need to peel) or pulverize them in a food processor. Wrap them in cheese cloth and squeeze to extract all the juice. You can also squeeze the pulp through your hands without cheesecloth in batches and then strain the juice.

Simple Syrup
(Yield: 2 cups)

2 cups organic raw cane sugar
1 cup filtered water

Combine the sugar and the water in a small saucepan over low heat. Sir well until hot to the touch and the sugar is completely dissolved, about 3 minutes. Cool and refrigerate until ready to use.

Review:

If you love sorrel or ginger brew, you'll love this drink! It's spicy, not too sweet, not too tangy, and is great for a cool beverage. Here are the tweaks I made to the recipe: - 1 1/2 cups dried organic hibiscus
- 2 cups simple syrup
- 1/3 cups raw cane sugar
- 6 tbsp organic raw honey
- 5 lemons
- After the initial squeezing for ginger juice, I boiled my ginger pulp with about 1/2 cup of water until it started bubbling, about 10-15 minutes. Then I squeezed and strained the juice and added this to my ginger juice and let it cool.

You'll need to stir the drink before serving as the ginger juice tends to separate to the bottom.

scarletrx Honey Peanut Chocolate Protein Crisps! These turned out great! This is a variation on #JamieEason 's Honey Almond Protein Crisps recipe from her LiveFit column on Bodybuilding.com

I'm focusing #cleaneating (natural ingredients. no additives, no preservatives, no artificial sweeteners) so I substituted a few ingredients (starred). The other substitutions were only what I had on hand. The Xylitol Brown Sugar blend was omitted. I used the following:

Arrowhead Puffed Brown Rice*
Organic Honey*
#BSN Lean Dessert Chocolate Fudge Pudding Protein
Organic Peanut Butter*
Crushed Walnuts

I cut my batch into 16 1.5-2 inch squares. The only addition I might make next batch is to add 1-2 teaspoons of coconut oil if I use the puffed brown rice again. Only a few squares crumbled a bit, but I suspect that was because of the peanut butter, which wasn't quite as smooth as almond butter.
As Jamie suggests, I keep them in the freezer and let a piece sit out for a minute or two to soften up. These are treats and not meant to be eaten everyday. You can eat it as a post-workout snack. Enjoy!

    1 cup Dry Oats
    1 Banana

    And I added:

    1 tbsp Raw Honey
    A dash of Cinnamon

    Wash your hands and then mush all of the ingredients together.

    Scoop out onto a foiled cookie sheet and bake at 350 degrees until golden brown (about 15-20 minutes). I added raw honey because I allow myself 20-30 grams of natural sugar a day. I'll make another batch tomorrow without honey and see how those taste.
