saltyseattle This is Miracle Hot Springs. Several natural pools with varying degrees of heat, and behind each little door in the back are yet more privately-rentable (totally secluded) pools where you're welcome to get naked and crank up the hot springs heat as high as you like. There are alligators on the property, geodesic domes, & yurts. @jonasnicholson, Bentley and I are having fun on this #Idaho #roadtrip. 3w

saltyseattle Day 1: rotisserie 2 chickens and set a tray of polenta-cheddar mashed potatoes underneath to catch the chicken drippings. Day 2: make gnocchi out of the polenta potatoes (I add a little kansui in for bouncy texture), and make gravy out of the chicken stock you got from pressure-cooking the chicken carcasses. I kind of want to write a whole book about things to do day 2 & 3 after roasting chicken. And by the way, mashed potatoes that are half cheddar cheesy polenta are just about the best ever, so naturally, the resulting gnocchi are ethereal. 4w

saltyseattle Inside this giant raviolo, there is a mixture of brillat savarin triple creme brie, potato, & cheesy grits, along with an oozy egg yolk. The sauce outside is kale, parmigiano reggiano, lovage, & ham hock. There's not a lot left to say after all that. 1mon
