I used game hens (they explain why in the post) and cooked on a cast iron skillet, but grilling on coals is best. Putting it in a taco and the chutney were my idea since I didn't have any sides. the chutney is just a basic cilantro chutney, but I added an avocado for richness (bunch of cilantro, one avocado, 2 garlic cloves, a few tablespoons of water, and salt in a food processor till you get a watery consistency). Next time I would add a Serrano chili to the chutney and some lime, and some grilled onions for the tacos.
