  •   littleteochew Mash a very ripe avocado into a puree (using a fork or food processor). Add grated parmesan. Mix and set aside. Boil pasta in salted water. Towards the last 1 or 2 mins before pasta is cooked, heat a drizzle of EVOO in a pan, add 2 cloves minced garlic, halved cherry tomatoes & avocado puree. Ensure low heat just so the garlic becomes fragrant but not browned. Add in pasta now, but do not discard the water. Use the water to thin out the puree - a few spoonfuls at a time - until desired consistency. Mix everything up briskly so that pasta is coated in the creamy avocado sauce. Transfer to a plate, sprinkle toasted almonds and serve. Add salt and pepper if desired. PS: I don't have specific measurements as it was my first time experimenting with this dish. 2d

  •   littleteochew @gk_life Hi! I bought the almond butter. However, making is very easy. You basically grind the almonds in a food processor until it turns to butter. You do need time and patience, though ... 2w

  •   littleteochew @gk_life Awww, so kind! Kah ki nang. I bought it from the health/organic section of Fairprice Finest. There is cashew butter as well as a mixed nut butter too. I love that they are 100% nut with no sugar, oil, etc. 2w
